Why don't restaurants use air fryers?
A recent documentary in Singapore (https://www.youtube.com/watch?v=tqcuskaReug) uncovered a shocking statistic - almost zero restaurants utilize air-fryers! Furthermore, the findings suggested a general lack of understanding about how these appliances work.
In the United States, there is a held belief that restaurants don't use air fryers because they can't produce as much food in comparison to regular deep fryers. Furthermore, people think the foods do not taste authentic- for example, fries fried in oil.
How does an air fryer work?
Air fryers are a type of small appliance used to cook food by circulating hot air around the food, similar to how a convection oven works. Air fryers typically have a basket or tray that holds the food to be cooked, and some models also have a built-in timer and temperature control.
Compared with other frying methods, the air fryer uses significantly less oil. This is because the hot air circulated by the air fryer helps to cook and crisp the food without heavily relying on oil to develop a dry crust.
Another advantage of air fryers is that they can cook food more evenly than deep frying. This is because the hot air circulates around the food more evenly, cooking it more evenly on all sides. This can help to prevent overcooking or uneven cooking that can sometimes occur when deep frying foods.
What about a combination oven?
A combination oven is like an air fryer, but it avoids the problems related to capacity, taste, and the hassle of cleaning after every batch of cooking. With a combi oven, you can create more meals that are crispy on the outside and moist on the inside quicker.
A combination oven uses three methods of cooking in one appliance: convection, steam, and a combination of steam and convection. Convection, or the circulation of dry heat, can be used to bake bread or roast meats. The steam function delicately poaches fish, steams rice, or cooks vegetables, so they have the perfect texture. When using the combination function, steam and convection work together to produce moist, flavorful results and minimal shrinkage.
This type of oven is perfect if you want to create healthy meals without sacrificing taste. The steam function retains nutrients and natural flavors, while the convection setting circulates hot air evenly to prevent overcooking or burning. And because you can cook multiple items at once, with presets for each different one, the prep and cleaning times are drastically reduced.
